Not to sure which is the oldest one still going but I know torrentzilla is quite old.
I think Bitsoup is one of the oldest... Opening: October 2004
Themixingbowl.org is very old, 2004 too as I saw the sysop joined.
Sysop can edit their joining date to whatever they like: )
Let's just look at their domain creation date:

Don't forget Torrentleech! They should be quite old as well! But I don't know how to check their opening date.
Domain creation date might get you a lot of info but trackers change their domains all the time, like torrentzilla they went down for a very long time but then came back in 2007: )
