Portugal is good and beautiful and not very expensive compared to the UK I think.

But I've been in Finland also, it is really beautiful too, though I went in summer and didn't see the aurora borealis.

But I guess anywhere in Europe would be suitable for you because it is always good and I guess it's not too expensive.
