Plex Streaming - 1080p Web-DL vs BRrip
I'm planning to set up a plex media server for 5 users, and I'm wondering about the best version for movies with high quality to size ratio.
4k/1080p remuxes are definitely out of the picture given the large file size which will place stress on the server during transcoding.
BDrips may also stress the server as they are around 10 - 20 gb.
That leaves BRrips and Web-DL and I'm wondering which is the better of the two?

It is not about the type of release, but yes the video and audio compression that are used.
A BRRip 1080p can vary from 4 to 15gb depending on the codecs and compression used.
If you are only worried about size, Web-DLs will be generally lighter. IMO, also better than the crappy 1080p BRRips done by scene groups under 5gb.
